EAT
Vietnamese Pho (pronounced ‘fahr’ in English) is a noodle soup that takes its influence from both Chinese and French cuisines. It is believed to have originally derived from the French stew, Pot-au-feu or “pot on the fire.” The secret to a great Pho lies in the making of a top notch stock.
DRINK
Made from fermented rice, sake is as multifarious within Japan as wine is to the rest of the world. If you’ve only ever drunk your sake warm, then you might be surprised to find that a number of restaurants and bars are now serving sake slightly chilled and in glass—even Riedel have their own sake set. The complexity of sake is mostly unknown to Western palates, but like wine has similar flavour notes, such as apples, bananas, melons, flowers, herbs and spices.
ENJOY
Well worth listening to is this dub reggae tribute to Pink Floyd’s seminal album, Dark Side of The Moon; Dub Side of The Moon. Released in 2003, the album was later remixed and re-issued as Dubber Side of The Moon.

Grape bins that wouldn’t look out of place in one of Jeffrey Smart’s iconic paintings, made me think of how nature, science, art and industry are all a part of what we do. It’s a challenging mix, but one that keeps me coming back each year to improve on the last.

Blewitt Springs juice is a spectacular mix of violet and crimson — a shade worthy of one of
Luis Barragan’s architectural masterpieces. If you haven’t seen his work, I suggest you do.
I discovered him a few years ago and have since become an admirer of the man who ‘created architecture from ordinary materials and local methods’.
